It’s time to look at the sky and control the grapes to decide the best time to harvest, always with the aim of obtaining the highest quality and expression in the grapes!

Muscat and Chardonnay are the varieties that have started the harvesting campaign in August 16, at the DO Binissalem. In the next few weeks, they will be followed by other local and foreign white and black varieties.

In order to start the harvest, winemakers evaluate the degree of suitable maturation, that is, both the concentration of sugars and the phenolic maturation, which will determine the optimal time for harvesting, depending on the wine to which this grape is destined, parameters conditioned by the availability of water and ambient temperature.
